Healthier French Toast

Ingredients

  • 2 eggs
  • 12 cup milk
  • 1 tablespoon maple syrup or 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 4 slices bread (whole grain preferably)
  • oil
  • powdered sugar
  • pureed carrot
  • and
  • sweet potato

Instructions

  1. Combine eggs, milk, orange puree, maple syrup or honey, cinnamon, and vanilla in a large shallow dish.
  2. Dip bread until soaked on both sides.
  3. Cook in skillet over medium heat.
  4. Use a small amount of oil (or butter) to keep the toast from sticking.
  5. Allow the first side to brown, then flip to brown the second side of the bread.
  6. Dust with powdered sugar or top with your favorite syrup.
