Ingredients
- 1/2 pound bacon
- 1 pkg. frzn hash brown potatoes
- 1/4 c. green pepper
- minced
- 1/2 teaspoon salt
- 1/4 c. onion
- minced
- 6 Large eggs
- 1/4 c. lowfat milk
- 1/4 c. mushrooms
- 1/2 teaspoon pepper
- 1 c. Cheddar cheese
- grated
Instructions
- Cook bacon till crisp.
- Remove to paper towels.
- Add in potatoes to drippings and cook over low heat till thawed.
- Combine Large eggs, lowfat milk and seasonings.
- Beat slightly.
- Pour over potatoes.
- Sprinkle bacon and vegetables on top of egg mix.
- Cover and cook over low heat for 20 min.
- Top with cheese and cover till melted.
- Cut into wedges and serve with toast or possibly biscuits.
