Hash Brown Omelette Recipe

Ingredients

  • 1/2 pound bacon
  • 1 pkg. frzn hash brown potatoes
  • 1/4 c. green pepper
  • minced
  • 1/2 teaspoon salt
  • 1/4 c. onion
  • minced
  • 6 Large eggs
  • 1/4 c. lowfat milk
  • 1/4 c. mushrooms
  • 1/2 teaspoon pepper
  • 1 c. Cheddar cheese
  • grated

Instructions

  1. Cook bacon till crisp.
  2. Remove to paper towels.
  3. Add in potatoes to drippings and cook over low heat till thawed.
  4. Combine Large eggs, lowfat milk and seasonings.
  5. Beat slightly.
  6. Pour over potatoes.
  7. Sprinkle bacon and vegetables on top of egg mix.
  8. Cover and cook over low heat for 20 min.
  9. Top with cheese and cover till melted.
  10. Cut into wedges and serve with toast or possibly biscuits.
