Ingredients
- 4 whole White Fish Fillets
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 4 teaspoons Garlic
- Minced And Divided
- 1 teaspoon Fresh Mint
- Chopped
- 1 teaspoon Salt
- 2 Tablespoons Olive Oil
- Divided
- 1 whole Lemon
- Juiced
- 1 whole Onion
- Chopped
- 1/4 cups Tomato Sauce
- 1 cup Tomato Juice
- 1 cup Water
Instructions
- Place the fish in a sealable bag with the cumin, chili powder, 1 teaspoon of garlic, mint, salt, 1 tablespoon of olive oil and lemon juice.
- Shake to coat the fish and set aside for 10-15 minutes.
- In a large skillet heat the remaining olive oil over medium heat and add the onion and remaining garlic.
- Saute until onion is golden brown and then add the tomato sauce and tomato juice.
- Cook another 10 minutes.
- Next add the marinated fish and the water.
- Bring to a simmer and cook for about 15 minutes, until the fish flakes easily with a fork.
- Serve immediately.
