Ingredients
- 1 lb ground turkey breast
- 12 cup chopped onion
- 34 cup chunky mild salsa
- 14 cup egg substitute
- 13 cup panko breadcrumbs
- 13 cup grated parmesan cheese
- 1 tomatoes
- large and sliced
- 2 tablespoons fresh parsley leaves
- fresh chopped (or use some cilantro)
- salt
- pepper
Instructions
- Mix together the turkey, onion, salsa, egg substitute, 1/4 cup of the Bread Crumbs, 1/4 cup of the cheese, Parsley, Salt and Pepper.
- Shape into a loaf shape or place into a loaf pan.
- Top with the loaf with the tomato slices and the remaining bread crumbs and cheese.
- Bake at 350 for about 40 minutes, or until cooked to 160 degrees internally.
- You may want to cover the top with foil if it becomes too brown.
