Ham 'n' Egg Sandwich

Ingredients

  • 1 (1 lb) unsliced loaf French bread
  • 4 tablespoons butter
  • softened
  • divided
  • 2 tablespoons mayonnaise
  • 8 slices deli ham (thin slices)
  • 1 large tomatoes
  • sliced
  • 1 small onion
  • thinly sliced
  • 8 eggs
  • lightly beaten
  • 8 slices cheddar cheese

Instructions

  1. Cut bread in half lengthwise.
  2. Hollow out top and bottom leaving 1/2 inch shell.
  3. Spread inside of bread shell with 3 Tbsp of butter and the mayonnaise.
  4. Line bottom of shell with ham, layer of tomato, layer of onion.
  5. Melt remaining 1 Tbsp of butter in skillet; add eggs.
  6. Cook, stirring occasionally, until almost set.
  7. Spoon into bread shell; top with cheese.
  8. Cover with bread top.
  9. Wrap in greased foil.
  10. Bake 15-20 minutes at 375 until heated through.
  11. Cut in serving-size pieces.
