Ham 'n' Cheddar Cups

Ingredients

  • 2 cups all-purpose flour
  • 14 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 6 eggs
  • 1 cup milk
  • 12 lb cooked ham
  • cubed
  • 12 lb sliced bacon
  • cooked and crumbled
  • 1 small onion
  • finely chopped

Instructions

  1. In a bowl, combine the flour, sugar, baking powder, salt and pepper.
  2. Beat eggs and milk; stir into dry ingredients until well mixed.
  3. Stir in ham, cheese, bacon and onion.
  4. Fill well-greased muffin cups 3/4 full.
  5. (Paper-lined muffin cups are not recommended because the muffins will stick to them).
  6. Bake at 350 degrees for 45 minutes or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minutes before removing to a wire rack.
