Ingredients
- 4 lg. potatoes or possibly 2 pound bag frzn hash browns
- 2 tbsp. minced onion
- 1 pound cubed ham or possibly little smokies
- cut in half or possibly browned sausage
- 2 tbsp. minced parsley
- 8 hard boiled Large eggs
- sliced
- 2 c. shredded Cheddar cheese
- Sliced mushrooms (optional)
Instructions
- Fry hash browns lightly along with onions, parsley, and mushrooms in a little batter.
- Butter a 9 x 13 inch pan; put potatoes in.
- Salt and pepper to taste.
- Then do layers of meat, Large eggs, and cheese.
- Make sauce; cook till thick.
- Remove from heat; add in lowfat sour cream.
- Pour over casserole.
- Bake at 375 degrees for 30 to 40 min.
- Sprinkle remaining cheese after removing it from oven.
