Grilled BLT Sandwiches

Ingredients

  • 8 strips Lean Bacon
  • 1/2 Soft Avocado
  • 13 cups Soft Goat Cheese
  • 2 cloves Garlic
  • Minced
  • 1/4 teaspoons Chipotle Powder
  • 4 slices Sourdough Bread
  • 1 whole Large Tomato (or 2 Small)
  • 1 cup Fresh Spinach
  • Vegetable Oil
  • For Cooking Panini

Instructions

  1. Cook the bacon.
  2. Remove the avocado flesh from the skin, add to a bowl with the goat cheese and mash together.
  3. Add garlic and chipotle powder.
  4. Mix until smooth.
  5. Spread on all 4 slices of bread.
  6. Pile bacon on one side of each sandwich.
  7. Add thinly sliced tomatoes and spinach.
  8. Top with second piece of bread.
  9. Heat a panini pan and press (see note below) over medium-high heat and brush with vegetable oil.
  10. Place a sandwich in the pan, place the press on top and press down for about 20 seconds.
  11. Cook for an additional 1-2 minutes, until bread is nicely toasted and spinach is slightly wilted.
  12. Remove to a plate and repeat with second sandwich.
  13. Note: If you dont have a panini pan you can use a regular skillet and another heavy pan as a press, or just press the sandwich down with a spatula and flip halfway through cooking.
