Grilled Asparagus With Raspberries and Asiago Cheese

Ingredients

  • 2 bunches asparagus
  • trimmed
  • 1 -2 tablespoon olive oil
  • 2 tablespoons raspberry vinegar
  • divided
  • salt and pepper
  • 1 tablespoon fresh thyme
  • chopped
  • 12 pint fresh raspberry
  • 14 cup asiago cheese
  • shredded

Instructions

  1. Preheat grill.
  2. Spread asparagus along a large tray with sides.
  3. Drizzle olive oil, then shake tray to coat asparagus.
  4. Add more olive oil if needed.
  5. Drizzle with vinegar, salt and pepper.
  6. Place asparagus across the grill and cook, turning carefully, until tender and crips, 3 - 5 minutes.
  7. Return asparagus to tray.
  8. Add thyme; drizzle with more raspberry vinegar (if needed).
  9. Arrange asparagus on a platter and garnish with fresh raspberries and cheese.
