Grilled and Smoked Tomato Relish
Ingredients
- Hickory chips
- soaked in water
- 8 plum tomatoes
- halved
- 1/3 cup diced shallots
- 1/4 cup capers
- 3 tablespoons red wine vinegar
- 1/3 cup chopped fresh basil
- 1/4 cup extra virgin olive oil
- Salt and pepper
Instructions
- Place smoking chips in a stovetop smoker.
- Add the tomatoes and cook for about 7 minutes.
- Chop into small dice and mix in bowl with remaining ingredients and season to taste.
