Ingredients
- 2 12 cups Simply Potatoes Traditional Mashed Potatoes
- 2 egg whites
- slightly beaten
- 4 green onions
- thinly sliced
- 3 tablespoons flour
- 1 tablespoon vegetable oil
Instructions
- Prepare mashed potatoes according to package directions.
- Refrigerate for at least 4 hrs, or overnight before using.
- In medium bowl combine potatoes, egg white, green onions and flour.
- Meanwhile, heat oil in large skillet over medium high heat.
- Drop1/4 cup potato mixture into skillet and press flat with spatula.
- Cook 3-5 minutes, until golden brown.
- Flip and cook the other side, 3-5 minutes, until golden brown.
- Keep warm in 250 F degree oven until all cakes have been made.
- Serve hot.
