Ingredients
- 12 cup olive oil
- must be good quality if used as a dressing
- 3 tablespoons red wine vinegar (also good quality)
- 1 teaspoon dry oregano flakes (chopped) or 2 teaspoons
- fresh (chopped)
- 14 cup lemon juice
- 1 teaspoon lemon rind
- grated
- salt and pepper (about 1/2 teaspoon of each)
Instructions
- Place ll the ingredients in a jar (with a well screwed on lid) and shake for 5 seconds.
- Place what you haven't used in the fridge for your next salad (bring back to room temp as the olive oil solidifies upon chilling).
