Ingredients
- 3 Large eggs
- 1 c. sugar
- 2/3 c. canned pumpkin
- 1 teaspoon lemon juice
- 3/4 c. flour
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 to 1/2 c. minced walnuts
Instructions
- Beat 3 Large eggs for 5 min.
- Add in 1 c. sugar gradually, then add in pumpkin and 1 tsp.
- lemon juice.
- Fold into mix: 3/4 c. flour, 1 tsp.
- nutmeg and 1/2 tsp.
- salt.
- Spread pumpkin mix onto jelly roll pan which has been greased and lined with greased wax paper.
- Top with minced nuts.
- Bake at 375 degrees for 15 min.
- Turn baked mix onto pastry cloth which has been sprinkled with powdered sugar.
- Roll mix up around cloth and refrigerateovernight or possibly for several hrs.
- Unroll and spread liberally with filling.
- Roll up again jelly roll style.
- Refrigeratefor several hrs, slice and serve.
