Great Northern Railway Mayonnaise

Ingredients

• 4 egg yolks
• 1 teaspoon dry mustard
• 2 cups salad oil
• 1 teaspoon salt
• 14 teaspoon white pepper
• 14 cup vinegar

Instructions

1. Mix together the mustard, pepper then whisk in the egg yolks.
2. Add half of the vinegar and whisk until you get a smooth texture.
3. Whisk in the oil little by little until you have added it all, then whisk in the remaining vinegar until you obtain a smooth mixture.
