Ingredients
- 2 lbs. fresh green beans
- cleaned & trimmed
- 1/4 c. extra virgin olive oil
- 1 clove garlic
- chopped
- 1 red onion
- minced
- 8 ounce. mushrooms
- sliced
- 1/2 teaspoon oregano
- 1/4 teaspoon basil
- 2 tbsp. parsley
- 2 tbsp. lemon juice
- Salt & fresh grnd pepper to taste
- 1/4 c. Parmesan cheese
Instructions
- Cook beans 3 min to crisp tender; drain.
- Heat oil in medium saucepan.
- Add in onion, garlic and spices.
- Cook till onion is just tender.
- Add in mushrooms and lemon juice.
- Simmer 5 min.
- Just prior to serving, toss green beans into oil mix.
- Heat through.
- Serve topped with Parmesan cheese.
