Ingredients

  • 2 pounds chicken breast halves
  • boneless
  • skinless
  • 1/2 cup flour
  • unbleached all-purpose
  • 1/2 teaspoons salt
  • 18 teaspoon black pepper
  • 2 large eggs beaten
  • 1 x vegetable oil for frying
  • 13 cup soy sauce
  • tamari
  • 13 cuo honey
  • 1 tablespoon sherry dry or (sugar)
  • 1 clove garlic crushed
  • 1 teaspoon ginger fresh grated
  • 2 tablespoons sesame seeds
  • 1 x celery optional
  • for garnish

Instructions

  1. Cut the chicken with 1 inch squares.
  2. For appetizers, cut into 1 inch (2 1/2 cm) squares.
  3. Combine flour, salt, and peppers.
  4. Dip in egg and coat with flour mix.
  5. Pour 1/2 inch oil in a wide drying pan; place over medium heat.
  6. When oil is hot, add chicken, half at a time.
  7. Cook and turn as needed until chicken browns.
  8. Cook 4 to 5 minutes for small pieces.
  9. Cook 6 to 8 minutes for large pieces.
  10. Meanwhile heat soy, honey, sherry, garlic, and ginger.
  11. Lift chicken from oil, dip into the honey soy mixture and place on cooking rack in a baking pan.
  12. Sprinkle with sesame seeds.
  13. Bake at 250F (125C) for 20 minutes, brushing with glaze after 10 minutes of cooking.
  14. Serve hot or at room temperature.
