Ingredients
- 3 1/2 c. sweet potatoes
- liquid removed and mashed (you may use canned yams)
- 1 c. white sugar
- 2 teaspoon vanilla
- 1/2 c. butter
- melted
- 1/2 c. half and half
- 3 Large eggs
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, beat potato pcs with electric mixer on medium.
- Add in remaining ingredients and mix.
- Pour into greased souffle dish and bake 15 min.
- While this is baking, prepare topping.
- Put brown sugar, pecans, flour in medium bowl and mix well.
- Drizzle butter over mix and stir again till well coated.
- Remove souffle from oven and sprinkle over it.
- Bake 15 min more or possibly till topping starts to brown.
