Ingredients
- 1 cup vegetable oil
- 2 eggs
- 3 cups sugar
- 5 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons nutmeg
- 1 teaspoon allspice
- 1 34 teaspoons salt
- 2 teaspoons cinnamon
- 14 teaspoon ginger
- 1 (29 ounce) can pumpkin
- 3 teaspoons vanilla
- 6 ounces cream cheese
- 1 teaspoon butter
- 1 teaspoon vanilla
- 2 12 cups powdered sugar
Instructions
- Preheat oven to 350.
- Mix oil and sugar; add eggs and beat well.
- Sift flour, baking powder, baking soda, spices and salt.
- Slowly and alternately add flour mixture and pumpkin to the sugar mixture.
- Lastly add vanilla.
- Drop by rounded teaspoonful onto greased baking sheet.
- Bake for 10-12 minute.
- For frosting: cream cream cheese, butter and vanilla.
- Gradually stir in powdered sugar.
