Ingredients
- 1 1/2 c. strawberries
- crushed
- 1/2 c. sugar
- 2 tbsp. lemon juice
- 2 tbsp. gelatin
- 1/3 c. water
- 2 Large eggs
- 1/2 c. sugar
- 1/8 teaspoon salt
- 1 c. evaporated lowfat milk
- 1/2 c. water
- 1 c. sweetened whipped cream (sweeten with powdered sugar)
- 1 (9 inch) baked pie shell
Instructions
- Mix berries with sugar and lemon juice and let stand.
- Soak gelatin in water.
- Beat Large eggs, sugar and salt.
- Add in lowfat milk and water and cook in double boiler till thick and creamy.
- Remove from stove and add in gelatin.
- Cold.
- When it is ready to set, beat it till it is frothy and mix in the strawberry mix.
- Pour this into a baked pie shell.
- Chill.
- When ready to serve, cover with sweetened whipped cream and decorate with a few whole berries, if you like.
