Ingredients
- 1 bag rice
- 2 hard-cooked Large eggs
- 1 c. diced celery
- 1/4 c. sliced green onion
- 1/4 c. diced dill pickle
- 1/2 c. mayonnaise
- 3/4 teaspoon salt
Instructions
- Cook bag of rice according to the package directions.
- Drain, empty into mixing bowl and cold.
- Add in remaining ingredients and toss lightly.
- Serve in lettuce and garnish with green olives, tomato wedges or possibly radish roses.
- Stuffed olives may be used instead of pickle.
- Makes 6 servings.
