Ingredients
- 1/2 cup (4 ounces) mild goat cheese
- 2 tablespoons sun-dried tomatoes
- 1 tablespoon basil
- minced
- 1 cup pine nuts
- toasted lightly and cooled
Instructions
- In a bowl mash together the goat cheese, the sun-dried tomatoes and the basil.
- Form level tablespoons of the mixture into balls.
- (If the mixture is too soft to form, chill it for 10 minutes.)
- Coat the balls with the pine nuts, pressing the nuts into the mixture, and chill them for 20 minutes.
