Gnocchi with a Sweet Potato Cilantro Pesto

Ingredients

  • 2 whole Small Sweet Potatoes
  • 17-58 ounces
  • weight Gnocchi
  • 2 cups Cilantro
  • 1 clove Garlic
  • 1/4 cups Almonds
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1/4 teaspoons Red Pepper Flakes
  • 1/4 cups Feta Cheese

Instructions

  1. Preheat oven to 450 degrees F.
  2. Wrap sweet potatoes in aluminum foil and bake until soft, about 1 hour.
  3. When they have about 10 minutes left, cook gnocchi according to package instructions.
  4. Remove sweet potato skins and place in food processor along with cilantro, garlic, almonds, salt, pepper, and red pepper flakes.
  5. Grind until finely combined.
  6. In a large bowl, combine gnocchi and cilantro pesto.
  7. Mix in feta cheese and enjoy!
