Gluten-Free Sweet BBQ Bacon Shrimp

Ingredients

  • 24 jumbo shrimp
  • peeled and deveined
  • 8 slices hickory smoked bacon
  • thick-cut
  • 1 cup barbecue sauce
  • 12 cup honey
  • 14 teaspoon cajun seasoning
  • 14 teaspoon salt
  • 14 teaspoon pepper

Instructions

  1. Preheat oven to 450F, and line a baking pan with foil.
  2. Defrost and/or warm the bacon in the microwave but do not allow it to crisp.
  3. Add the spices to the honey and mix well.
  4. Dip the shrimp into the honey mixture one at a time, then wrap them with 1/3 slice bacon; secure the bacon with toothpicks.
  5. Arrange the shrimp in the baking pan, cover with half the BBQ sauce, and bake for 10 minutes.
  6. Baste with remaining BBQ sauce and cook an additional 5 minutes.
