Ingredients

  • 1 12 cups cornmeal
  • 12 cup rice flour (I use Authentic Foods Brand)
  • 12 teaspoon baking soda
  • 12 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • beaten
  • 2 tablespoons vegetable oil
  • 2 cups sharp cheddar cheese
  • shredded
  • 1 cup frozen corn
  • thawed
  • 1 small onion
  • chopped small

Instructions

  1. Combine first 4 ingredients, mix well.
  2. Add milk, eggs, oil, stirring well.
  3. Stir in remaining ingredients.
  4. Pour into greased 9 inch square baking pan.
  5. Bake at 350 degrees for 40 to 45 minutes until lightly brown.
  6. Yield 9 servings.
