Ingredients
- 2 whole Chicken Breasts
- 13 cups Olive Oil
- 1 cup Coconut Flour
- 2 Tablespoons Chipotle Seasoning
- 1/2 teaspoons Black Pepper
Instructions
- Preheat oven to 425 degrees .
- Prepare a 13x9 baking sheet by setting a metal rack on top, and spraying the rack with cooking spray.
- Setting your chicken on the rack, rather than directly onto the baking sheet will help your chicken tenders from getting soggy.
- Trim and cut both chicken breasts into strips, approx.
- 6 strips per breast, 12 strips total.
- Place all chicken strips into a small bowl, filled with the olive oil.
- In a medium-sized bowl, combine the coconut flour, chipotle seasoning, and pepper.
- Allow excess oil to drip off of each chicken strip, and then roll them into the coconut flour mixture, one at a time.
- Place each strip onto the rack.
- Bake chicken strips at 400 degrees for 20 minutes, or until the coating is lightly crisp.
