Gizzard & Garlic Scapes Oyster Sauce Fry

Ingredients

  • 300 grams Gizzard
  • 2 bunches Garlic scapes
  • 1 piece Ginger
  • 1 tbsp Sake
  • 1 dash Pepper
  • 1 to 1/5 tablespoons Oyster sauce
  • 1 tbsp Vegetable oil
  • 1 Sesame oil

Instructions

  1. Remove the white-ish grains from the gizzards and slice into 5 mm pieces.
  2. Buying ones with the grains removed already is easier.
  3. Cut the garlic rabes into 5 to 6 cm pieces, and mince the ginger.
  4. Heat vegetable oil in a frying pan and cook the ginger until it becomes fragrant.
  5. Add the gizzards and cook until the surface has become whiten.
  6. Add garlic scapes and stir-fry.
  7. Once mixed in with the oil, add sake and cook until the liquid evaporates.
  8. Sprinkle pepper and oyster sauce, finish with a round of sesame oil and it's complete.
