George Washington Carver's Dandelion Salad (1942)
Ingredients
- 2 cups finely shredded dandelion greens
- 1 medium onion
- finely chopped
- 2 small radishes
- finely chopped
- 1 tablespoon minced parsley
- 1 tablespoon sugar (optional)
- salt
- pepper
- vinaigrette (or mayonnaise)
- hard-boiled egg
- sliced
- for garnish
- pickled beet
- for garnish
Instructions
- Mix the dandelion, onion, radishes, parsley, sugar, salt and pepper.
- Add vinaigrette and toss to mix.
- Garnish with slices of egg and/or beets.
