Instructions
Cut the skirt steak into 4 even pieces; rub both sides with coffee spice rub or your favorite dry rub for steaks.
Thread baby sweet bell peppers onto 2 flat skewers.
Brush steaks and peppers with olive oil; cook on a hot stovetop grill pan, 8 to 10 minutes for the peppers and 3 to 4 minutes per side for the steaks (for medium-rare).
Serve steak sliced with peppers, warm corn tortillas, crumbled queso fresco or farmer's cheese, and chopped cilantro.
