Garlicky Potato Leek Soup

Ingredients

  • 1 1/2 Yukon gold potato
  • 2 medium leeks
  • 2 medium carrots
  • 2 clove garlic
  • 4 c. Swanson Chicken Broth
  • 1 c. light cream
  • 1 c. packed fresh baby spinach

Instructions

  1. Stir the potatoes, leeks, carrots, garlic and broth in a 4-quart saucepot.
  2. Over medium-high heat, heat to a boil.
  3. Reduce the heat to low.
  4. Cook for 10 minutes or until the vegetables are tender.
  5. Stir the cream and spinach in the saucepot.
  6. Heat through.
