Garlicky Cannellini Beans

Ingredients

  • 2 tablespoons olive oil
  • 2 shallots
  • finely chopped
  • 1 garlic clove
  • minced
  • 2 (14 ounce) cans cannellini beans
  • drained and rinsed
  • 7 tablespoons vegetable broth
  • 2 tablespoons fresh parsley
  • chopped
  • 1 teaspoon lemon juice
  • salt and pepper

Instructions

  1. Heat the oil in a saucepan, add the shallots and garlic and cook for 2-3 mins until tender but not colored.
  2. Add the cannellini beans and broth and bring to the boil.
  3. Simmer for about 4 mins until the beans are tender and heated through.
  4. Add the parsley and lemon juice, season and serve immediately.
