Ingredients
- 2 tablespoons olive oil
- 2 shallots
- finely chopped
- 1 garlic clove
- minced
- 2 (14 ounce) cans cannellini beans
- drained and rinsed
- 7 tablespoons vegetable broth
- 2 tablespoons fresh parsley
- chopped
- 1 teaspoon lemon juice
- salt and pepper
Instructions
- Heat the oil in a saucepan, add the shallots and garlic and cook for 2-3 mins until tender but not colored.
- Add the cannellini beans and broth and bring to the boil.
- Simmer for about 4 mins until the beans are tender and heated through.
- Add the parsley and lemon juice, season and serve immediately.
