Ingredients

  • 1 lb haricot beans
  • 3 potatoes
  • ham bone
  • 12 ounce lard or 12 ounce dripping
  • 1 -2 beef bone
  • 12 ounce flour
  • 1 small cabbage
  • salt and pepper

Instructions

  1. Soak the beans in water for some hours.
  2. Put them in a saucepan with 2 qts.
  3. water and the bones; bring to the boil and simmer gently for about 3 hours.
  4. After 2 hours add the finely shredded cabbage, the peeled and quartered potatoes and the fat and flour, mixed; season to taste and simmer for a further hour.
