Frozen Chocolate Fudge Pie

Ingredients

  • 1 cup walnut halves
  • toasted
  • 8 ounces chocolate
  • broken into pieces
  • 34 cup sugar
  • 14 cup boiling water
  • 4 eggs
  • 34 cup butter
  • room temperature
  • 1 tablespoon instant coffee powder
  • 1 tablespoon vanilla
  • 14 cup flour
  • 1 cup whipping cream
  • well chilled
  • 14 cup powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350.
  2. Lightly oil 5 cup glass pie plate.
  3. In a food processor, coarsely chop walnuts.
  4. Coarsely chop 3 oz chocolate.
  5. Add to walnuts.
  6. Chop remaining chocolate with sugar then mix until cocolate is as fine as sugar.
  7. With machine running, pour 1/4 cup boiling water and blend until chocolate is melted.
  8. Add eggs and blend 30 - 45 seconds, stopping once to scrape down sides.
  9. Add butter, coffee and vanilla and mix for 1 minute.
  10. Add flour to the chopped walnut chocolate mixture and blend until just combined, about 5 seconds.
  11. Spoon mixture into prepared pan.
  12. Bake until edges are set and centre is slightly soft, about 30 - 35 minutes.
  13. Cool completely.
  14. Freeze pie at least 4 hours.
  15. Remove from freezer 15 minutes before serving.
  16. Cut into wedges and garnish each serving with the Whipped Cream Topping.
