Ingredients
- 250g tub PHILADELPHIA Spreadable Cream Cheese
- 1/2 tablespoon icing sugar
- 1 tablespoon Cointreau
- 90g packet chocolate hazelnut macaroons
- crushed
- 12 red glace cherries halved
- 100g flaked almonds
- toasted
- 60g dark chocolate
- melted
- Fruit Coulis
- 1 punnet pureed raspberries (or strawberries) with Safeway 1 lb For $3.99 thru 02/09
- 1 tablespoon icing sugar
Instructions
- Combine Philly*, icing sugar and Cointreau.
- Fold through the macaroons and cherries.
- Spoon the mixture onto a piece of baking paper, spread to form a rectangle, 30cm x 5cm.
- Roll up in the paper to form a log, then carefully press into a triangular shape.
- Freeze until firm.
- Remove the paper.
- Thoroughly coat the log with flaked almonds and drizzle with chocolate.
- Slice and serve with Fruit Coulis.
