Fresh Salmon Burgers with Butter Soy Sauce

Ingredients

  • 3 pieces Fresh (raw) salmon
  • 1 medium Potato
  • 1 pinch Salt
  • 1 dash Pepper
  • 2 tbsp Katakuriko
  • 1 Egg
  • 1 tbsp Butter
  • 2 tbsp White wine
  • 2 tsp Soy sauce

Instructions

  1. Slice the potato into 1-2 mm thick julienne.
  2. Take the bones and skin off the raw salmon, and chop up roughly.
  3. 1 cm dice is good.
  4. Put the salmon in a bowl, add the egg, katakuriko, salt and pepper and mix well.
  5. It will be quite loose, but don't worry about it.
  6. Add the shredded potato and mix well.
  7. It will become a bit easier to form
  8. Divide into 4 portions and form into patties.
  9. Melt the butter over medium heat in a frying pan.
  10. Cook the patties for 2 minutes on one side, then turn over and cook for another minute.
  11. Add the wine, put on a lid and steam-cook for 3 minutes.
  12. Swirl in the soy sauce.
  13. Coat the salmon patties with the soy sauce.
  14. Portion out on plates, and it's done.
