Ingredients
- 1 can black beans
- 1/3 cup crumbled queso fresco
- 2 Roma tomatoes; diced
- 1/2 yellow onion; minced
- 2 clove garlic; minced
- 1 roasted red bell pepper; large dice
- 1 avocado; diced
- 2 limes
- 1 salt and pepper
- 1 vegetable oil; as needed
Instructions
- Heat vegetable oil in a saute pan.
- Add onions.
- Sweat until nearly caramelized.
- Add garlic.
- Sweat until fragrant.
- Add tomatoes and bell pepper.
- Toss.
- Add black beans.
- Toss.
- Add avocado and juice of one lime.
- Toss.
- Season with salt and pepper.
- Garnish with crumbled queso fresco.
- Serve with lime wedge.
