Ingredients
- 3 medium Egg yolk
- 3 medium Egg white
- 60 grams Cake flour
- 20 grams Margarine
- 70 grams Sugar

Instructions
- Prepare your ingredients.
- Line the mold with parchment paper or brush margarine thinly inside the mold.
- Sift the cake flour.
- Microwave the margarine for 10-20 seconds.
- Preheat the oven to 170C.
- Separate the eggs into yolks and whites.
- Add the egg whites and sugar into a bowl and whip with a handheld mixer over a double boiler at about 60C.
- Whip well until there is a nice peak remaining when lifted.
- Add the yolks into the bowl from Step 4 and continue whipping.
- Add the cake flour little by little and fold with a spatula while turning the bowl with the other hand.
- Do not break the air bubbles.
- Pour in the melted margarine and mix quickly.
- Pour into the mold and rap it lightly to even out the surface.
- Bake for 25 minutes in an oven preheated to 170C preheated.
