Ingredients

  • 3 medium Egg yolk
  • 3 medium Egg white
  • 60 grams Cake flour
  • 20 grams Margarine
  • 70 grams Sugar

Instructions

  1. Prepare your ingredients.
  2. Line the mold with parchment paper or brush margarine thinly inside the mold.
  3. Sift the cake flour.
  4. Microwave the margarine for 10-20 seconds.
  5. Preheat the oven to 170C.
  6. Separate the eggs into yolks and whites.
  7. Add the egg whites and sugar into a bowl and whip with a handheld mixer over a double boiler at about 60C.
  8. Whip well until there is a nice peak remaining when lifted.
  9. Add the yolks into the bowl from Step 4 and continue whipping.
  10. Add the cake flour little by little and fold with a spatula while turning the bowl with the other hand.
  11. Do not break the air bubbles.
  12. Pour in the melted margarine and mix quickly.
  13. Pour into the mold and rap it lightly to even out the surface.
  14. Bake for 25 minutes in an oven preheated to 170C preheated.
