Ingredients

  • 2 lbs. tomatillos
  • husks removed
  • 4 large pasilla peppers
  • 1 serrano pepper
  • 1 large sweet onion
  • peeled and halved
  • 1 C. cilantro leaves
  • juice of 3 limes
  • 3/4 tsp. kosher salt

Instructions

  2. Prepare your grill.

  4. Grill the tomatillos, peppers, and onion until well charred all over.
  5. Turn a few times during cooking for even charring.

  7. Remove veggies to a large bowl, and let them cool until you can handle them safely.

  9. De-seed the peppers and scrape off most of their skin.
  10. You dont have to do a perfect job here a little blackened skin in your salsa is more than alright.

  12. Combine the grilled vegetables, cilantro, lime juice, and salt in a large bowl.
  13. Using an immersion blender, process until cilantro is finely chopped and salsa is as smooth as you like.
