Ingredients

  • 4 large Potatoes
  • 6 large Eggs
  • 1 1/2 large Slice of fully cooked ham

Instructions

  1. Wash and dice potatoes - leave skins on
  2. Heat small amount of EVOO in a large skillet, add diced potatoes.
  3. Cook on medium.
  4. Dice ham slices and add to skillet full of potatoes.
  5. Salt and pepper to your liking.
  6. Cover.
  7. Cook for about 15 min or until potatoes are tender -stir occasionally
  8. In a 2nd pan, scramble and cook all 6 eggs.
  9. Add scrambled eggs to potatoes and ham skillet.
  10. Mix well.
