Ingredients
- 13 14 ounces whole wheat rotini
- 3 tablespoons olive oil
- 4 garlic cloves
- minced
- 1 medium onion
- chopped
- 1 large zucchini
- diced
- 13 cup pepperonchini bell pepper
- chopped
- 2 tablespoons chili powder
- 14 12 ounces diced tomatoes with diced chilies
- undrained
- 12 cup pitted black olives
- chopped
- 12 lb chicken breast
- diced
Instructions
- Cook rotini according to directions.
- Meanwhile, in a large skillet, heat oil over medium heat.
- Saute garlic, onions, and chicken until chicken is done.
- Add zucchini and peppers, cook 5 minutes or until vegetables are tender-crisp, stirring occasionally.
- Add the chili powder, tomatoes, and olives, and bring to a boil.
- Reduce heat to low.
- Simmer uncovered 10 minutes, sturring frequently.
- Add rotini and mix well.
- Serve immediately.
