Ingredients
- 1 tablespoon extra virgin olive oil
- 4 garlic cloves
- minced
- 1 19-ounce can fava beans
- drained and rinsed
- 1 15-ounce can quartered artichoke hearts
- drained
- 2 tablespoons chopped fresh thyme
- 1/4 teaspoon salt or to taste
- 1/4 to 1/2 teaspoon black pepper
- 1 tablespoon freshly squeezed lemon juice
- 1 cup diced ripe tomato
Instructions
- Heat olive oil in a nonstick skillet over medium-high heat.
- Add garlic and saute 3 to 4 minutes, until tender.
- Add beans, artichoke hearts, thyme, salt, pepper and lemon juice, and heat to serving temperature.
- Stir in tomatoes.
