Fava Beans, Artichokes and Tomatoes

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves
  • minced
  • 1 19-ounce can fava beans
  • drained and rinsed
  • 1 15-ounce can quartered artichoke hearts
  • drained
  • 2 tablespoons chopped fresh thyme
  • 1/4 teaspoon salt or to taste
  • 1/4 to 1/2 teaspoon black pepper
  • 1 tablespoon freshly squeezed lemon juice
  • 1 cup diced ripe tomato

Instructions

  1. Heat olive oil in a nonstick skillet over medium-high heat.
  2. Add garlic and saute 3 to 4 minutes, until tender.
  3. Add beans, artichoke hearts, thyme, salt, pepper and lemon juice, and heat to serving temperature.
  4. Stir in tomatoes.
