Fava bean and Cheese salad
Ingredients
- 2 cup fava beans (yield from 2 lbs fresh)
- 1 tbsp extra virgin olive oil
- 2 tbsp cheese thinly sliced
- 1/2 tsp lemon juice (optional)
- 1 pinch red pepper flakes
Instructions
- Prepare 2 lbs beans for salad by shelling the beans.
- Boil in lightly salted water for 1 to 2 minutes.
- Drain.
- Put beans in ice water.
- Remove the husks.
- Combine with thinly sliced cheese.
- Add lemon juice, olive oil and season to taste.
