Ingredients
- 1 whole chicken; deboned and with skin
- 1 cup white wine
- 3 tbsp peppercorn melange
- 2 tbsp lemon peel seasoning
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 2 tbsp dried basil
- 1 tbsp fresh thyme; minced
- 1 salt
- 1 EVOO; as needed
Instructions
- Marinate chicken in wine for 4-48 hours.
- Pat chicken dry.
- Season.
- Bake at 350 for approximately 45-50 minutes or until thermometer reaches 165.
- Different parts will be fully cooked at different times.
- A digital thermometer is a cook's best friend!
- Very briefly place chicken under broiler to crisp the skin of necessary.
