Preheat the oven to 300 degrees F and line a baking sheet with parchment paper.
Stir together the rolled oats, chia seeds, almonds, cherries, coconut flakes, both types of raisins, the sunflower seeds, walnuts, maple syrup, cinnamon and vanilla in a large bowl.
Pour onto the prepared baking sheet and season with salt.
Bake, stirring after 15 minutes, until the nuts are golden brown, about 30 minutes total.
