Eggs Florentine from the Plaza Hotel

Ingredients

  • 1 lb fresh spinach
  • cooked and chopped
  • 14 teaspoon nutmeg
  • 1 cup heavy cream
  • 8 eggs
  • 13 cup grated parmesan cheese

Instructions

  1. Be sure the cooked spinach is thoroughly drained [squeeze dry and place between sheets of paper towels.
  2. Drain again after chopping.
  3. Add salt and pepper to taste and freshly ground nutmeg.
  4. Add 1/3 c heavy cream to the spinach and mix well.
  5. Divide the spinach among 4 individual buttered baking dishes.
  6. Break 2 eggs into each dish and spread with some of the remaining cream.
  7. Sprinkle each dish lightly with grated cheese.
  8. Bake in a moderate oven, 375 degrees, for about 10 minutes, or until the eggs are set to taste.
  9. Note: you can skip the heavy cream, you can substitute canned spinach for fresh or frozen.
