Eggplant in a Spicy Sauce, Terong Belado
Ingredients
- 1 lb eggplant
- asian
- sliced diagonally
- 2 chili peppers
- seeded sliced
- 1 green 1 red
- 1 onion
- chopped
- 2 tablespoons oil
- 4 limes
- juice of
Instructions
- In a mortar and pestle, crush chili peppers and onion to make a paste; a food processor would work.
- Fry eggplant in oil until half cooked; remove eggplant.
- Add paste; cook until aromas develop.
- Add eggplant.
- Add lime juice; mix well; serve.
