Eggplant & Green Pepper with Sweet Miso

Ingredients

  • 2 small Eggplants
  • 2 Green peppers
  • 1 tbsp Sugar
  • 1 tbsp Mirin
  • 1 tsp Miso
  • 2 tbsp Vegetable oil

Instructions

  1. Peel 3 strips of skin from the eggplant.
  2. Cut into bite-sized pieces.
  3. Also chop the green pepper into bite-sized pieces.
  4. Heat vegetable oil in a frying pan.
  5. Add the eggplant.
  6. Once the eggplant has been coated with the oil, cover with a lid and steam until completely cooked.
  7. Add the green pepper and continue cooking.
  8. Add the sugar, mirin, and miso and quickly coat the ingredients to finish.
