Ingredients
- 2 small Eggplants
- 2 Green peppers
- 1 tbsp Sugar
- 1 tbsp Mirin
- 1 tsp Miso
- 2 tbsp Vegetable oil
Instructions
- Peel 3 strips of skin from the eggplant.
- Cut into bite-sized pieces.
- Also chop the green pepper into bite-sized pieces.
- Heat vegetable oil in a frying pan.
- Add the eggplant.
- Once the eggplant has been coated with the oil, cover with a lid and steam until completely cooked.
- Add the green pepper and continue cooking.
- Add the sugar, mirin, and miso and quickly coat the ingredients to finish.
