Egg Plant Parmesan Recipe

Ingredients

• 2 med. egg plants
• 1 lg. block Mozzarella cheese
• 6 Large eggs

Instructions

1. Cut and fry in mix of Italian style bread crumbs and egg.
2. Layer in baking dish, like lasagna with tomato sauce.
3. Add in layers topped with Parmesan and Mozzarella cheese.
4. Bake 60 min at 350 degrees.
