Ingredients
- 6 free range medium eggs
- 1 bunch of small spring onion (chopped finely)
- 2 tablespoons low-fat mayonnaise
- 1 tablespoon low fat or 1 tablespoon nonfat yogurt
- pepper
- 1 teaspoon curry powder
- if required
Instructions
- In a medium sauce pan boil the eggs, shell and skin them and leave to for 5 minutes to cool.
- once the eggs are cool to the touch, slice each one in half and using a teaspoon take out the yolk.
- in a seperate bowl mix the egg yolk, spring onions, yoghurt, mayonaise and spice until smooth.
- finally all you need to do is spoon the mixture into the craters in the egg and serve with whatever you wish; best with salad or soda bread.
