Egg Dumplings In Chicken Broth Recipe

Ingredients

  • 2 lg. cans chicken broth
  • 6 Large eggs
  • 1 teaspoon salt
  • 2 c. flour
  • 1/2 stick butter
  • melted and cooled
  • Healthy pinch of nutmeg

Instructions

  1. Heat broth to boil.
  2. While broth is heating, beat Large eggs with fork, add in salt and heat a few seconds.
  3. Add in 1/2 c. flour and nutmeg and continue beating, always using a fork.
  4. Add in cooled butter and mix till smooth.
  5. Gradually add in the remaining flour, mixing well after each addition.
  6. Drop by 1/2 teaspoonful into boiling broth.
  7. When they all pop to the top of the broth, cover and simmer 15 min.
  8. Yields about 50 dumplings.
