Egg and Milk-free Puff Pastry-style Cookies

Ingredients

  • 100 grams Cake flour
  • 1 dash Salt
  • 2 tbsp Oil
  • 2 tbsp Beet sugar
  • 2 tbsp Water
  • 1/2 tsp Vanilla extract

Instructions

  1. Sift the cake flour and salt into a bowl, and mix well with a whisk.
  2. Then add the oil and, using your palms, rub it into the dry ingredients until it resembles fine panko.
  3. Add the ingredients to the Step 1 bowl, and bring together into a dough, taking care not to over-knead.
  4. Spread out some plastic wrap on your work surface and place the dough on top.
  5. Roll it out with a rolling pin, then fold over and roll again - repeat this rolling and folding process several times.
  6. Roll out to 3 mm thick and stamp out cookies.
  7. Bake in an oven preheated to 200C for 15-20 minutes.
